Hey Paul,
I went to Calaveras on Tuesday and our catfish were not fried but they did look like they had been boiling for a bit. Laughing
We had a pretty good evening with 24 nice catfish to fillet.

I went to a customers house yesterday to finish installing a furnace and air conditioner and I noticed there was a little smoke smell coming from the back of the house. I asked the lady what it was, she said she was smoking fish that her husband and son caught. Do you smoke your fish?

I've never actually smoked it per say . To me smoked is brined them smoked at very low temps. I will do some , but it's a hot smoke. I spent a lot of time in Cabo thru the years , and there was a school teacher that would spend his summer vacation smoking fish for the fishermen. I could never get the recipe from him because I did speak enough Spanish at the time. That was the best fish I've ever eaten .
